Japchae – Korean Festival Noodles

A dish traditionally made for celebrations and holidays in Korea. Sweet potato noodles stir-fried with colourful vegetables and savoury-sweet sauce. Great warm or cold. 

Serves: 2–3 
Cooking Time: 20 mins 

Ingredients: 

  • 100g sweet potato noodles (dangmyeon)

  • 100g beef strips or mushrooms

  • 1/2 small onion, 1/2 carrot, 1/2 capsicum, 2 shitake mushrooms

  • A handful of baby spinach (optional)

  • 1/2 cup tbsp Mama Kim’s Korean Master Sauce

  • 1 tsp sesame oil

  • Sesame seeds (to garnish) 

  • Add salt to taste.
     

Instructions: 

  1. Soak noodles in warm water for 15 mins. Drain and toss with a little sesame oil.

  1. Stir-fry each ingredient separately until just tender.

  1. Stir-fry noodles with sauce until glossy (2–3 mins).

  1. Combine everything. Finish with sesame oil and sesame seeds. 
     

Serve with: enjoy on its own or with rice.
