
Japchae – Korean Festival Noodles
A dish traditionally made for celebrations and holidays in Korea. Sweet potato noodles stir-fried with colourful vegetables and savoury-sweet sauce. Great warm or cold.

Cooking Time: 20 mins
Ingredients:

100g sweet potato noodles (dangmyeon)

100g beef strips or mushrooms

1/2 small onion, 1/2 carrot, 1/2 capsicum, 2 shitake mushrooms

A handful of baby spinach (optional)

1/2 cup tbsp Mama Kim’s Korean Master Sauce

1 tsp sesame oil

Sesame seeds (to garnish)

Add salt to taste.
Instructions:

Soak noodles in warm water for 15 mins. Drain and toss with a little sesame oil.

Stir-fry each ingredient separately until just tender.

Stir-fry noodles with sauce until glossy (2–3 mins).

Combine everything. Finish with sesame oil and sesame seeds.
Serve with: enjoy on its own or with rice.
