Chilli Marinade & BBQ Glaze

A bold, flavourful marinade that works with chicken, steak, pork ribs, tofu, or seafood. Perfect for BBQs, oven roasting, or pan-searing. 

Serves: 2 
Cooking Time: 10–20 mins (plus marinating) 

Ingredients: 

  • 300g protein (chicken thighs, steak, pork belly, tofu, squid, etc.)

  • 2–3 tbsp Mama Kim’s Chilli Master Sauce

  • 1–2 tbsp water or oil (optional, to loosen sauce for glazing) 
     

Instructions: 

  1. Coat protein evenly with sauce. For thick or bone-in cuts, add 1–2 tbsp water.

  1. Marinate in the fridge for at least 1 hour (overnight for best flavour).

  1. Grill, pan-fry, or roast. For BBQ: brush with thinned sauce in the final minutes.

  1. For extra flavour and shine, add a spoon of sauce at the end and cook for 1 min. 
     

Serve with: BBQ sides, salad, rice, or wrap. 

Tip: Sauce has natural sugars and can burn on high heat. Cook on medium and finish with glaze.
