Easy Korean BBQ Chicken Skewers
Simple Aussie BBQ chicken, finished with Mama Kim’s Korean Master Sauce.
No marinating. Just grill, brush and enjoy.
Serves: 2 to 3
Cooking Time: about 7 to 8 minutes
Ingredients
600 g chicken thigh fillets, cut into 3–4 cm cubes
Mama Kim’s Korean Master Sauce
BBQ skewers, optional
Instructions
Prepare the chicken
Thread the chicken onto skewers if using.
You can also cook the chicken pieces directly on the BBQ without skewers.
Cook the chicken
Cook on a hot BBQ for 3 minutes on the first side, until lightly browned.
Turn and cook for another 3 minutes on the second side, until both sides are browned and the chicken is mostly cooked through.
Brush and finish
Lightly brush sauce on one side, turn and cook for 20 to 30 seconds.
Brush the other side, turn and cook for another 20 to 30 seconds.
Turn once more for 10 to 20 seconds, just until the chicken is glossy.
Remove from the BBQ and rest briefly before serving.
Tips
Cut the chicken into even 3–4 cm pieces so it cooks quickly and evenly on the BBQ.
Brush the sauce lightly and only at the end. Too much sauce too early will burn.
Soak wooden skewers in water for 20 to 30 minutes before cooking to prevent burning on the BBQ.
If skewers feel like too much work, cook the chicken pieces flat on the BBQ or a grill pan instead.
This method also works well with chicken breast, just reduce the cooking time slightly.
