Chilli Mud Crab Recipe You Can Cook at Home
Easy Mama Kim’s Chili Mud Crab
Rich, bold chilli flavour with minimal prep. A simple seafood dish made using Mama Kim’s Chili Master Sauce, perfect for sharing with rice or crusty bread.
Serves: 2 to 3
Cooking Time: 25 minutes
Ingredients:
2 mud crabs, cleaned and cut
1 brown onion, finely chopped
1 spring onion, sliced
3 garlic cloves, minced
1 cup tomato paste
½ cup Mama Kim’s Chili Master Sauce
3 tablespoons fish sauce
1 tablespoon sugar
1 cup water
¼ cup oil
Fried onion (optional, for garnish)
Instructions:
Cook the aromatics
Heat oil in a large pan or wok over medium heat. Add onion, spring onion, and garlic. Cook until soft and lightly caramelised.
Build the sauce
Add tomato paste, Mama Kim’s Chili Master Sauce, fish sauce, and sugar all at once. Stir well and cook for about 5 minutes until thick, glossy, and fragrant.
Add liquid
Pour in the water and bring the sauce to a boil.
Cook the crab
Add the mud crab to the pan and mix well to coat with the sauce. Cover with a lid and cook for about 10 minutes until the crab is fully cooked.
Finish and serve
Plate the crab and spoon over plenty of sauce. Garnish with spring onion and fried onion if using.
Tips:
Keep the heat at a steady medium once the crab goes in. The combination of simmering sauce and steam cooks the crab evenly.
The sauce is designed to be bold and rich. Serve with rice or bread to soak up every bit.
If cooking larger crabs, allow an extra 2 to 3 minutes.
