Mama Kim’s Slow Simmered Kimchi & Pork Belly Stew (Kimchi Jjigae)
A deeply comforting Korean classic with rich, full-bodied flavour.
Kimchi Jjigae is one of the most iconic and widely loved dishes in Korean home cooking. It is the dish many Koreans grow up with, known for its bold, warming character and its ability to bring people together around the table. Made with well-aged kimchi and pork belly, the flavours become deeper and more satisfying the longer it simmers.
This version uses Mama Kim’s Artisan Kimchi and Kimchi Chilli Sauce to build a flavourful base with minimal effort. Everything is added at once and gently simmered until the pork is tender and the broth is rich and balanced.
Ingredients (Serves 2 to 3)

300g pork belly, thick cut.

240g Mama Kim’s Artisan Kimchi (about half a tub).

2 tablespoons Mama Kim’s Kimchi Chilli Sauce.

2 tablespoons soy sauce.

500ml water to start, with more added during cooking as needed.

Spring onion, chopped.
Method

Place the pork belly, kimchi, Kimchi Chilli Sauce, soy sauce and 500ml of water into a medium pot. Bring to a gentle boil over medium heat, then reduce to low and simmer.

As the broth reduces, add small amounts of water to maintain the original water level. Allow it to simmer for at least 30 minutes until the pork is soft and the flavour is deep and well rounded.

Taste and adjust seasoning if needed. Finish with chopped spring onion just before serving.
Serving suggestion
Enjoy with steamed rice and simple sides such as roasted seaweed or a soft fried egg. Even better the next day when the flavours have had time to develop.
